New summer menu at Shiso

Chef/Owner Ed Metcalfe of Sonoma’s Shiso Modern Asian and Sushi has added some eclectic dishes for the summer. Entrees include a panko-and macadamia-nut-crusted soft shell crab accompanied by green papaya, mango and a Shiso salad and a Surf & Turf dish that features grilled Hokkaido scallops with avocado mousse and grilled Kobe beef flat iron steak, served with fresh grated horseradish, crème fraiche and chives.
In addition to both table seating and “sushi bar” seating available at both lunch and dinner, Metcalfe has unveiled a new, Zen-inspired patio for al fresco dining.
“Our vision is to be socially responsible to our customers, community, and our environment,” said Metcalfe. “We make our very best efforts to support local farmers for our product. This means trying our best to use only chemical free produce, meat, fish and dairy.”
“Along with selecting organic products, we are also doing our part for the environment. We use bio-degradable products wherever possible. We also recycle as many products as possible, like our grease for bio-diesel. The Japanese have set extremely good examples of being environmentally conscious and taking pride in what they do. We like to think we can do the same.”
Shiso is a type of Japanese mint that was brought over by Japanese immigrants in the early 1800’s. It offers a clean, refreshing and aromatic quality to its diverse applications in food.
