Like many Americans, I’m a pizza junky. From NYC slices to Chicago style deep dish to the America’s more recent obsession Neapolitan style pizza.
In 2011, prior to relocating full time to Wine Country, I visited my parents, who relocated to Sonoma a few years prior from Indianapolis. They took me to Estate, Sondra Bernstein’s restaurant that resided in the Victorian mansion where the General’s Daughter used to be. There, I had my first egg on a pizza. It was a life changing experience: runny, sweet, and perfect.
One of life’s great gastronomic pleasures is breaking a fried or over easy egg yolk. On a pizza, it’s all the more enjoyable as one dips bubbly crust into the yolk and it runs over the pizza, melding with mozzarella, tomato, basil and the right dowsing of olive oil. I break the egg at the beginning, and slowly horde the egg whites for the encore, using a fork and knife to enjoy the last bits.
Alas, Estate closed in 2012 and I have been at a loss on where I can get an egg on my pizza in Sonoma Valley. Recently, I enjoyed a fabulous margherita at Vignette, a casual, modern pizzeria at the Barlow in Sebastopol. They serve up hot Neapolitan pies until they sell out of house-made dough, egg optional.
