For this month only, El Dorado Kitchen is replacing their delicious ahi tuna tartare with salmon tartare to celebrate the launch of California King Salmon season.
Fresh, raw salmon is mixed with Asian pear and sits on top of a bed of avocado mousse. It is topped with a small mound of tobiko (fish roe) and served with a side of wonton chips. Pair it with a glass of rosé and you’ve got a perfect summer appetizer.
